Fish Supper

Fish is my “convenience” food. I like keeping it on hand in the freezer because it thaws quickly, cooks quickly, and can be used in a variety of ways. One way we like to prepare it is by frying it in coconut oil. Here’s our preferred method: (Increase these amounts if using more fish.)

Easy Fried Fish

Course Main Course
Servings 4 people

Ingredients

  • 1/4 cup coconut oil or peanut oil
  • 4 white fish fillets, such as tilapia
  • 1/4 cup flour
  • 1 egg
  • 2 Tbsp Panko breadcrumbs
  • 2 Tbsp finely-grated Parmesan cheese

Instructions

  1. Heat oil in a skillet on the stove top over medium heat.

  2. Line up three shallow dishes next to your stove top. In the dish farthest from the stove, put the flour. In the second, beat the egg. In the third, mix together Panko and Parmesan cheese.

  3. Moving down the row, dredge fish fillets in the flour, then in the egg, then in the breadcrumbs. Put fish into the hot oil and let cook for a few minutes on each side, until the fish is opaque and flakes with a fork if scratched.

  4. Serve with rice, or on toasted buns with tartar sauce.
