“I am sorry to say that Peter was not very well during the evening. His mother put him to bed and made some chamomile tea; and she gave a dose of it to Peter! ‘One teaspoonful to be taken at bedtime.’ But–Flopsy, Mopsy and Cottontail had bread and milk and blackberries for supper.”

Remember that story? I’m sure you do; but being a self-respecting scholar, I need to cite my source. It’s from The Tale of Peter Rabbit by Beatrix Potter. Peter Rabbit is one of my favourite literary heroes, and I had the honour of visiting his home at Hilltop Farm when I was in England.

Lately, Peter has been hopping around my thoughts as I’m attempting to write my own story with an animal hero. When I made this berries and cream dessert the other night, I dedicated it to Peter, knowing he would’ve loved it. Chamomile tea seems like a good tonic, but I always felt sorry that Peter didn’t get his share of the berries, too.

I made this recipe with sucanat (sometimes called rapadura), which gave it a richer flavour. You can read more about sucanat in my blog post on the subject! If you don’t have sucanat, feel free to use dark brown sugar instead. (You can also buy sucanat online).

Ingredients

  • 2 cup fresh berries
  • 1/2 cup sour cream
  • dark brown sugar or sucanat

Instructions

  1. Divide the berries between four broiler-safe ramekins, top with sour cream and sprinkle liberally with brown sugar.

  2. Broil for a couple of minutes until the sugar melts into the cream and the berries begin to release their juices.

Recipe Notes

  • If you don’t have ramekins, prepare in a small broiler-safe pan (so no Pyrex), and then dish into tea cups to serve.
  • You can purchase sucanat, a rich-tasting, less-processed brown sugar, online.
