I was in the kitchen making freezer jam when inspiration crept up on me. The counter was crowded with canning jars, strawberry hulls, and a bowl of jewel-colored pulp extracted by force from four quarts of organic strawberries fresh-picked in the Michigan countryside. It was those juicy, sticky, crushed berries that did me in.

I’ve been smitten by strawberries. Previously I’ve confessed that blueberries are my favorite berry, but yesterday the strawberries had me. Of all fruits, fresh picked berries are perhaps the farthest away in taste from their bland, store bought counterparts. Eat a sun-kissed, rain-plumped, hand-picked strawberry and tell me if I’m not right.

The effect of my inspiration was to swirl liquid strawberries into creamy milk. A spot of honey made it into a sweet treat fit for tea parties and elegant brunches

…or to accompany jam-making.

Strawberry Milk

Ingredients

  • 1/2 cup strawberry juice (about 15-20 strawberries)
  • 3/4 cup whole milk
  • 2 tsp honey

Instructions

  1. Rinse and hull strawberries.

  2. In a bowl, crush strawberries with a potato masher or the bottom of a jar. 

  3. Strain crushed berries through a sieve placed over a bowl or large measuring cup to make 1/2 cup of juice. 

  4. Add cold milk and honey to strawberry juice; stir until honey dissolves. Serve.
