Salad is energizing–it’s like the food version of a glass of water.
Just like water, though, salads sometimes get a bad rap for being boring. I’ll admit, I’ve eaten many a naked, unaccessorized salad simply because it was good for me. But bulk it up with chunks of juicy fruit, chopped walnuts, or cubed cheddar, and I scarf it down.
Chef salad is the perfect answer for a night when you need a meal that’s frugal but still hearty. And although there are many versions of chef salad, this slightly sweet incarnation was a total hit for us. Give it a try…
Ultimate Chef Salad
For the Salad:
- lettuce for 4 people
- 2 large apples
- 2 oranges
- 2-4 boiled eggs
- 4 oz cheese cubed
- 6-10 pieces salami
For the Dressing:
- 1/4 cup mustard
- 1/4 cup raw honey
- 3 Tbsp sesame oil
- 2 tsp sesame seeds
- Toss all of the salad ingredients together in a large bowl.
- Whisk together the dressing ingredients, adjusting amounts to taste. Store in the refrigerator.
- Just before serving, toss the salad and dressing together.
