French Onion Soup

Ingredients

butter

large yellow onions
peeled and sliced

beef broth
salt to taste
half a glass red wine
French bread
sliced thick

Swiss or Gruyere cheese
grated
Instructions
Melt the butter in a large soup pot over medium-low heat.
Add onions and saute for at least half and hour, stirring occasionally, until the onions are very tender.
Add beef broth and simmer for 15 minutes.
Add wine and salt to taste; simmer for another 5 minutes.
Ladle soup into broiler-safe ramekins or bowls. Top each serving with a slice of French bread and divide the cheese over each bowl.
Place ramekins under the broiler and broil for a few minutes, until the cheese becomes bubbly and lightly browned.
If you do NOT have broiler-safe bowls, put the bread and cheese on a cookie sheet and broil separately, then use to top soup bowls before serving.
